Coconut Flour Chocolate Chips Cookies

Ingredients
  

  • 1/2 cup coconut flour organic
  • 1/2 cup shredded coconut unsweetened
  • 1/2 cup coconut sugar
  • 1/3 cup coconut oil virgin & organic
  • 1/2 cup chocolate chips unsweetened
  • 3 large eggs organic
  • 1 tbsp vanilla extract
  • 1/2 tbsp cinnamon
  • 1/4 tsp pink salt or sea salt
  • 1/4 tsp baking soda aluminium-free
  • 1/3 cup unsweetened coconut milk optional

Instructions
 

  • Preheat your oven to 350 degrees Fahrenheit.
  • Line a cookie sheet, or tray, with a baking mat or parchment paper.
  • In a big bowl combine all the dry ingredients: coconut flour, shredded coconut, coconut sugar, cinnamon, salt, and baking soda.
  • Then add the vanilla extract, the coconut oil, and the eggs.
  • Mix everything until it is well combined.
  • Add in the unsweetened chocolate chips and mix until evenly distributed.
  • Use a spoon to portion the dough. And with your hands shape and flatten them into a circle.
  • Add some chocolate chips to the top for an extra chocolatey flavor.
  • Bake at 350 degrees Fahrenheit for 20-25 minutes until they are slightly golden.
  • Let them cool down for 20 minutes before eating.

Notes

Ida Tips
  • When you are preparing the mix, if your dough is too dry you can add 1/3 cup of coconut milk.
  • For a vegan version, substitute the eggs for ground chia seeds and Psyllium Husk, soaked in water.
