Preheat your oven to 350 degrees Fahrenheit.
Line a cookie sheet, or tray, with a baking mat or parchment paper.
In a big bowl combine all the dry ingredients: coconut flour, shredded coconut, coconut sugar, cinnamon, salt, and baking soda.
Then add the vanilla extract, the coconut oil, and the eggs.
Mix everything until it is well combined.
Add in the unsweetened chocolate chips and mix until evenly distributed.
Use a spoon to portion the dough. And with your hands shape and flatten them into a circle.
Add some chocolate chips to the top for an extra chocolatey flavor.
Bake at 350 degrees Fahrenheit for 20-25 minutes until they are slightly golden.
Let them cool down for 20 minutes before eating.
