Chocolate-Covered Banana Bites

These chocolate-covered banana bites are one of the easiest snacks you can make to satiate your sweet cravings. They are cooling, chocolatey, and packed with Magnesium and Potassium. You can also sprinkle with different toppings to add a variety of flavors, textures, and nutrients.

Equipment

Ingredients
  

  • 2 Medium Bananas (Riped but firm)
  • 1/2 cup Dark Chocolate Chips (Unsweetened)
  • 1 tbsp Coconut Oil (Virgin)
  • 1 tbsp Vanilla Extract (optional)
  • A few drops Stevia (optional)
  • A pinch Cinnamon (optional)

For the Toppings

  • 3 tbsp Shredded Coconut
  • Nuts (chopped)(optional)
  • 1/2 tbsp Chia Seeds

Instructions
 

  • First, wash your bananas.
  • Line a baking sheet with wax or parchment paper.
  • Peel and cut the bananas into rounds slices about 1/4 inch thick.
  • Place everything in the freezer for 30 minutes until solid.
  • In a mixing bowl, add 1/2 cup of Dark chocolate chips.
  • Place your chocolate and one tbsp of coconut oil into a glass bowl and put it over a pot of simmering water. Make sure the water is not touching the bottom of the bowl because it can burn the chocolate. And we only need the stem to heat the bowl to melt everything.
  • Add a tbsp of vanilla extract or pinch cinnamon for some extra flavor. Taste the mix, and if it's too bitter, you can add a few drops of Stevia.
  • Add your toppings to the mix, making sure it stays liquid. My favorite ones are shredded coconut and chia seeds.
  • Remove the bananas from the freezer and dip each slice into the chocolate mix. Use a toothpick to remove them from the melted chocolate.
  • Place back in the freezer to let the chocolate harden for around 1 hour.

Notes

  • When you take the frozen banana slices out of the freezer to dip in the chocolate, the bananas will soften quickly, so try to do this step as fast as possible.
  • If the melted Dark Chocolate's taste is too strong, you can add a few drops of stevia and a pinch of cinnamon.
  • Make sure the bananas aren't mushy. For this recipe, firm-ripe bananas are the best option.
  • When adding your toppings, make sure you use only a sprinkle because the mixture should stay liquid to cover the bananas easily.
