And I haven’t bought cookies from the supermarket for a long time as this recipe is easy to make, and I can eat it without guilt, knowing that they are loaded with a bunch of essential nutrients such as proteins and fiber.

Coconut’s popularity has increased since science began studying the benefits of its MCT oils, among other great benefits like its antifungal, antiviral, and antimicrobial properties.
Coconut flour is made from dry, ground coconut, which contains many of the benefits mentioned above.
Besides, it is rich in plant-based iron. And because of its high amounts of fiber, it helps stabilize blood sugar levels, promotes healthy digestion, supports weight loss, and improves heart health.
Another interesting fact about coconut flour is that it contains fewer Omega 6 fatty acids than other gluten-free flour.
Generally, the modern diet is rich in Omega 6, which contributes to chronic inflammation. So, coconut flour might be a better alternative if you are on an anti-inflammatory diet or suffering from any inflammatory condition.

I remember my first time experimenting with it.
I was very frustrated trying to make coconut flour crepes 🤯. And they were a total failure.
So, I will tell you some tips and tricks to help you better understand this incredible ingredient. And so you can start using it more often in your recipes.
Pros
- It’s gluten-free, grain-free, and nut-free. Remember that coconut is a fruit.
- It’s high in fiber and protein, which makes it very filling.
- A small amount goes a long way.
- It tastes great!
- It’s more affordable than other gluten-free flour.
Cons
I think the only disadvantage is that it needs more eggs. Also, be aware that it absorbs more liquids than other flours. For this reason, it cannot be used as a one-to-one replacement in some recipes.

Coconut Flour Chocolate Chips Cookies
Equipment
- Mixing Bowl
- Silicone Spatula
- Measuring cups
- Tray or Cookie sheet
- Parchment paper or Baking Mat
- Oven
Ingredients
- 1/2 cup coconut flour organic
- 1/2 cup shredded coconut unsweetened
- 1/2 cup coconut sugar
- 1/3 cup coconut oil virgin & organic
- 1/2 cup chocolate chips unsweetened
- 3 large eggs organic
- 1 tbsp vanilla extract
- 1/2 tbsp cinnamon
- 1/4 tsp pink salt or sea salt
- 1/4 tsp baking soda aluminium-free
- 1/3 cup unsweetened coconut milk optional
Instructions
- Preheat your oven to 350 degrees Fahrenheit.
- Line a cookie sheet, or tray, with a baking mat or parchment paper.
- In a big bowl combine all the dry ingredients: coconut flour, shredded coconut, coconut sugar, cinnamon, salt, and baking soda.
- Then add the vanilla extract, the coconut oil, and the eggs.
- Mix everything until it is well combined.
- Add in the unsweetened chocolate chips and mix until evenly distributed.
- Use a spoon to portion the dough. And with your hands shape and flatten them into a circle.
- Add some chocolate chips to the top for an extra chocolatey flavor.
- Bake at 350 degrees Fahrenheit for 20-25 minutes until they are slightly golden.
- Let them cool down for 20 minutes before eating.
Notes
- When you are preparing the mix, if your dough is too dry you can add 1/3 cup of coconut milk.
- For a vegan version, substitute the eggs for ground chia seeds and Psyllium Husk, soaked in water.
Enjoy with your favorite vegetable milk.
Storage them in airtight containers. They can last for one week in the fridge. And you can also freeze them and store them for a longer time.
